Lemon Pepper Salmon Kebabs

Serves 4
Ingredients:
2 tsp. lemon pepper seasoning
24 (1 1/2 inch) pieces skinless salmon (about 1 1/2 lb.)
24 lemon slices (from 2 large lemons)
24 (3/4 inch thick) slices of zucchini (from 1 lb. zucchini)
Step 1
Stir together marinade, lemon pepper seasoning in a medium bowl.
Step 2
Stir in salmon, lemon slices and zucchini.
Step 3
Cover and chill for at least 2 hours or up to 4 hours.
Step 4
Skewer onto 8 (10 inch) skewers. Discard marinade.
Step 5
Preheat grill to medium-high heat (400 - 450). Place kebabs on oiled grate. Grill, covered, until salmon is cook through, about 6 minutes, turning once halfway through.
