Spiced Pork Chops with Pineapple-Cilantro Rice

Serves 4
Ingredients:
1 cup long-grain white rice
1 Tbsp paprika
2 tsp ground cumin
1/4 tsp ground cinnamon
Kosher salt and pepper
1 Tbsp olive oil
4 Bone-in pork chops (each about 1 in. thick)
1 medium red onion, sliced
1 8-oz can crushed pineapple, drained
1/2 cup fresh cilantro, roughly chopped
Step 1
Heat oven to 425F. Cook rice per package directions
Step 2
Meanwhile, in a large bowl, combine paprika, cumin, cinnamon, 3/4 tsp salt, and 1/2 tsp pepper. Heat oil in large oven safe skillet on medium-high. Season pork with spice mixture and cook until golden brown, 2 min. per side. Scatter onions around pork and roast until pork is just cooked through, 4 to 5 min.
Step 3
Fluff rice with fork and toss with pineapple and roasted onions. Fold in cilantro and serve with pork chops.
